Ingredients
  

  • 1.5 kg beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 onion sliced
  • 4 garlic cloves chopped
  • 1 cup beef broth
  • 1/2 cup pepperoncini peppers
  • 1/4 cup pepperoncini juice
  • 2 carrots chopped
  • 2 potatoes chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions
 

Season the Beef

  • Pat the beef dry using paper towels. Add salt and black pepper on all sides. Press the seasoning well so it sticks nicely. This step helps build strong flavor in the roast.

Sear the Meat

  • Heat olive oil in a large pot over medium heat. Place the beef inside carefully. Sear each side for about 4 minutes until brown. This locks in juices and adds deep flavor.

Cook Onion and Garlic

  • Remove the beef and set aside. Add sliced onion to the same pot. Cook for 3 minutes until soft. Add garlic and cook for 1 more minute until fragrant.

Add Liquids and Spices

  • Pour in beef broth and pepperoncini juice. Add thyme and paprika. Stir everything well and scrape the bottom of the pot. This adds extra flavor to your sauce.

Add Beef and Vegetables

  • Put the beef back into the pot. Add carrots, potatoes and pepperoncini peppers around the meat. Make sure everything is slightly covered with liquid.

Slow Cook the Roast

  • Cover the pot with a lid. Cook on low heat for about 3 hours. The meat will become very tender. Check once or twice and spoon some juices over the meat.

Serve Hot

  • Once done, remove the beef carefully. Slice or shred it using forks. Serve with vegetables and spoon the tasty sauce on top for best flavor.
