Ingredients
  

  • 4 large potatoes thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/2 cup cooked ground beef or chicken
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped onions
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh cilantro

Instructions
 

Slice the Potatoes

  • Wash the potatoes well. Slice them into thin, even rounds. Try to keep them the same size. This helps them cook evenly and become crispy in the oven.

Season the Potatoes

  • Place the slices in a large bowl. Add olive oil, salt, black pepper and paprika. Mix everything well. Make sure each slice is coated with seasoning.

Prepare the Baking Tray

  • Line a baking sheet with parchment paper. Arrange the potato slices in a single layer. Do not overlap them. This helps them bake evenly and get crispy.

Bake the Potatoes

  • Preheat your oven to 200°C (400°F). Bake the potatoes for 20 minutes. Flip them halfway through cooking. Bake until they are golden and crispy.

Add the Toppings

  • Remove the tray from the oven. Sprinkle cheddar and mozzarella cheese on top. Add cooked meat, jalapeños, tomatoes and onions evenly over the potatoes.
