- 2 pounds Yukon Gold potatoes peeled and cut into chunks
- 1 tablespoon salt for boiling water
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1 teaspoon salt for dressing
- 3 hard-boiled eggs chopped
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 1/4 cup chopped dill pickles
- 1 tablespoon pickle juice
- 1 tablespoon fresh parsley chopped
Prepare the Dressing
In a large bowl, add mayonnaise, mustard, vinegar, sugar, salt and black pepper. Mix well until smooth and creamy. Taste and adjust salt or mustard if needed.
