Ingredients
  

  • 1 4–5 pound bone-in prime rib roast
  • 1/4 cup kosher salt
  • 2 tablespoons black pepper
  • 2 tablespoons fresh rosemary finely chopped
  • 4 garlic cloves minced
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 1 teaspoon thyme finely chopped
  • Optional: fresh rosemary sprigs for garnish

Instructions
 

Prepare the Roast

  • Take the prime rib out of the fridge. Let it rest at room temperature for 1 hour. Pat dry with paper towels for a better crust.

Preheat the Oven

  • Preheat the oven to 450°F (230°C). This high temperature helps create a crisp and flavorful rosemary salt crust.

Make the Rosemary Salt Mixture

  • In a small bowl, combine kosher salt, pepper, chopped rosemary, thyme, minced garlic, olive oil and Dijon mustard. Mix until it forms a paste.

Coat the Prime Rib

  • Rub the rosemary salt mixture all over the roast. Cover every side evenly. Make sure the meat is fully coated for the best flavor.

Roast at High Heat

  • Place the roast in a roasting pan. Roast at 450°F for 20 minutes to sear the outside and lock in juices.

Lower the Oven Temperature

  • Reduce the oven temperature to 325°F (160°C). Continue roasting until the internal temperature reaches 130°F (medium-rare). Use a meat thermometer for accuracy.

Rest the Meat

  • Remove the roast from the oven. Tent with aluminum foil and let rest for 15–20 minutes. This allows juices to redistribute for tender meat.

Carve and Serve

  • Slice the prime rib with a sharp knife. Serve with the crispy rosemary salt crust on top. Enjoy the juicy, flavorful meat immediately.
