Ingredients
  

  • 4 cups rye bread cubed
  • 2 cups cooked corned beef chopped
  • 1 ½ cups sauerkraut drained well
  • 2 cups shredded Swiss cheese
  • 1 cup Thousand Island dressing
  • 3 large eggs
  • 1 cup whole milk
  • 2 tablespoons melted butter
  • ½ teaspoon black pepper
  • ¼ teaspoon salt

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F. Grease the baking dish lightly with butter. This helps prevent sticking. Make sure the oven is hot before baking.

Prepare the Bread Layer

  • Place rye bread cubes evenly in the baking dish. Spread them gently using your hands. This bread layer creates the base of the casserole.

Add Corned Beef and Sauerkraut

  • Sprinkle chopped corned beef evenly over the bread. Add drained sauerkraut on top. Spread it well so each bite has flavor.

Add Cheese and Dressing

  • Sprinkle shredded Swiss cheese over the meat layer. Drizzle Thousand Island dressing evenly across the top. This adds creaminess and classic taste.

Mix the Egg Mixture

  • In a bowl, whisk eggs, milk, melted butter, salt and pepper. Mix until smooth. This mixture holds everything together while baking.

Pour and Bake

Notes

  • Drain sauerkraut very well before using
  • Use day-old bread for better texture
  • Do not skip Swiss cheese for true flavor
  • Let casserole rest ten minutes before serving
