Ingredients
  

  • 2 cups baking mix like Bisquick
  • 1 pound ground breakfast sausage mild or spicy
  • 8 ounces cream cheese softened
  • 1 can Rotel tomatoes with green chilies well drained
  • 2 cups shredded cheddar cheese

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. This step ensures even baking and easy cleanup later.

Mix the Base

  • Add sausage and cream cheese to a large bowl. Mix well until smooth. This creates a creamy and rich base for the sausage balls.

Add Rotel and Cheese

  • Add drained Rotel tomatoes and shredded cheddar cheese. Mix gently until everything blends well. Make sure the Rotel is well drained.

Add Baking Mix

  • Slowly add the baking mix to the bowl. Stir until a thick dough forms. The dough should hold together easily without being sticky.

Shape the Balls

  • Roll the mixture into small balls using your hands. Place them on the prepared baking sheet. Leave small space between each ball.

Bake Until Golden

  • Bake for 22 to 25 minutes. The sausage balls should turn golden brown. The inside should stay soft and moist.

Cool and Serve

  • Remove the tray from the oven. Let the sausage balls cool for five minutes. Serve warm for best taste.

Notes

  • You can use gloves for cleaner and easier rolling.
  • Always drain the Rotel tomatoes very well. Extra liquid can make the dough too wet.
  • Use softened cream cheese for easier mixing and smooth texture.
  • If the mixture feels dry, add one tablespoon of milk.
  • Do not overbake, or the sausage balls may dry out.
