Ingredients

  • Rump roast beef – 1.5 kg
  • Olive oil – 2 tablespoons
  • Salt – 1 teaspoon
  • Black pepper – 1 teaspoon
  • Garlic minced – 4 cloves
  • Onion sliced – 1 large
  • Carrots cut into chunks – 2 cups
  • Potatoes cut into chunks – 3 cups
  • Beef broth – 2 cups
  • Worcestershire sauce – 2 tablespoons
  • Thyme dried – 1 teaspoon
  • Rosemary dried – 1 teaspoon

Instructions

Prepare the Meat

  • Preheat your oven to 160°C. Pat the rump roast dry using paper towels. This helps create a better crust when searing the meat.

Season the Roast

  • Rub salt and black pepper all over the meat. Make sure it is evenly coated. This step builds the base flavor of the dish.

Sear the Meat

  • Heat olive oil in a Dutch oven on medium-high heat. Place the roast in the pot. Sear all sides until brown. This locks in flavor and juices.

Add Aromatics

  • Remove the roast for a moment. Add garlic and onions to the pot. Cook for a few minutes until soft and fragrant. Stir gently to avoid burning.

Add Vegetables

  • Add carrots and potatoes to the pot. Mix them with onions and garlic. This helps them absorb flavor from the base ingredients.

Add Liquid and Herbs

  • Pour in beef broth and Worcestershire sauce. Add thyme and rosemary. Stir everything well to combine flavors before placing the meat back.

Return the Roast

  • Place the seared roast back into the pot. Make sure it sits in the liquid. This helps keep it moist during slow cooking.

Slow Cook in Oven

  • Cover the pot with a lid. Place it in the oven. Cook for about 3 hours. The slow cooking makes the meat tender and flavorful.

Check and Serve

  • Check the roast with a fork. It should be very tender. Let it rest for a few minutes before slicing. Serve warm with vegetables and gravy.

Notes

  • Sear the meat well for best flavor.
  • Use fresh herbs if available.
  • Cook low and slow for tenderness.
  • Do not skip resting time.
  • Add more broth if needed during cooking.
  • Cut vegetables into large chunks.
  • Taste gravy and adjust seasoning before serving.
