Ingredients
  

  • 3 pounds beef short ribs
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 cup red grape juice or non-alcoholic wine
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary

Instructions
 

Prepare the Short Ribs

  • Pat the short ribs dry with paper towels. Season all sides with salt and black pepper. Let them sit at room temperature for 15 minutes before cooking.

Sear the Meat

  • Heat olive oil in a large Dutch oven over medium-high heat. Place ribs in the hot pot. Sear each side for about three minutes until brown and crispy.

Remove and Set Aside

  • Once browned, remove the ribs from the pot. Place them on a plate. Do not clean the pot because the brown bits add deep flavor.

Cook the Vegetables

  • In the same pot, add chopped onion, carrots and celery. Cook for five minutes. Stir often until vegetables become soft and slightly golden.

Add Garlic and Tomato Paste

  • Add minced garlic and tomato paste to the vegetables. Stir well for one minute. This step builds rich flavor and adds a deep color.

Pour the Liquid

  • Add beef broth and red grape juice to the pot. Stir and scrape the bottom gently. This releases all the tasty browned bits from the pot.

Add Herbs and Ribs

  • Place the short ribs back into the pot. Add thyme and rosemary. The liquid should cover most of the meat. Bring everything to a gentle simmer.

Slow Cook in the Oven

  • Preheat oven to 170°C (325°F). Cover the pot with a lid. Place it in the oven. Cook for about 2 hours 30 minutes until meat becomes very tender.

Check for Tenderness

  • After cooking time, carefully remove the pot from the oven. The meat should fall off the bone easily. If not, cook for another 20 minutes.

Serve Warm

  • Remove herbs before serving. Spoon sauce over the ribs. Serve hot with your favorite side dishes for a comforting meal.
