Ingredients

  • 3 pounds sirloin tip roast
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 4 cloves garlic minced
  • 1 cup beef broth
  • 3 carrots cut into chunks
  • 3 potatoes peeled and chopped
  • 1 large onion cut into wedges

Instructions

Prepare the Oven

  • Preheat your oven to 350°F (175°C). A properly heated oven helps the roast cook evenly. Place a roasting pan on the counter and prepare your vegetables.

Season the Roast

  • Pat the sirloin tip roast dry with paper towels. Rub olive oil over the meat. Sprinkle salt, pepper, garlic powder, onion powder, rosemary and thyme evenly.

Sear the Meat

  • Heat a large skillet over medium-high heat. Place the roast into the hot pan. Sear each side for two to three minutes. This step locks in flavor.

Prepare the Vegetables

  • Place carrots, potatoes, and onion pieces into the roasting pan. Spread them evenly across the bottom. Add minced garlic for extra flavor and aroma.

Add the Roast

  • Place the seared roast on top of the vegetables in the roasting pan. Pour beef broth around the roast. This keeps the meat moist while cooking.

Roast the Beef

  • Cover the pan loosely with aluminum foil. Place it in the oven. Roast for about 90 minutes. The meat should reach your preferred level of doneness.

Rest and Slice

  • Remove the roast from the oven. Let it rest for 10 minutes before slicing. Resting keeps the juices inside the meat and improves tenderness.

Notes

  • Bring the roast to room temperature before cooking.
  • Use a meat thermometer for perfect doneness.
  • Do not skip searing the meat for better flavor.
  • Let the roast rest before slicing.
  • Add mushrooms for extra flavor.
  • Use fresh herbs if available for stronger aroma.
