Ingredients

  • 6 bone-in chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 onion sliced
  • 3 garlic cloves minced
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

Season the Chicken

  • Pat the chicken thighs dry using paper towels. Sprinkle salt, pepper, paprika and garlic powder evenly over the chicken. This seasoning step helps build flavor before slow cooking begins.

Prepare the Slow Cooker Base

  • Place sliced onions and minced garlic at the bottom of the slow cooker. These ingredients create a flavorful base and prevent the chicken from sticking.

Add the Chicken

  • Place the seasoned chicken thighs on top of the onions in the slow cooker. Arrange them in a single layer if possible for even cooking.

Mix the Sauce

  • In a small bowl, combine chicken broth, soy sauce, honey, tomato paste and dried thyme. Stir well until everything mixes smoothly.

Pour the Sauce Over the Chicken

  • Slowly pour the prepared sauce over the chicken thighs. Make sure the sauce spreads around the chicken and reaches the bottom of the slow cooker.

Slow Cook the Chicken

  • Cover the slow cooker with the lid. Cook on low heat for about four hours. The chicken will become tender and absorb the rich sauce.

Thicken the Sauce

  • Mix cornstarch and water in a small bowl to create a slurry. Add it to the slow cooker and stir gently. Cook for ten more minutes until the sauce thickens.

Notes

  • Use bone-in chicken thighs for the best flavor.
  • Do not overcook the chicken to keep it juicy.
  • Add vegetables like carrots or potatoes if desired.
  • For crisp skin, broil the chicken for a few minutes after cooking.
  • Taste the sauce and adjust salt if needed.
