  • 2 cups dried pinto beans
  • 6 cups water
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 smoked ham hock
  • 2 bay leaves
  • 1 jalapeño chopped
  • Fresh parsley for garnish

Wash the Pinto Beans

  • Rinse the dried pinto beans under cold water. Remove damaged beans or small stones. Soak them overnight if you want softer beans faster.

Prepare the Slow Cooker

  • Grease the slow cooker lightly with olive oil. This helps prevent sticking and makes cleanup much easier after cooking the beans.

Add the Ingredients

  • Place pinto beans, onion, garlic, jalapeño and ham hock into the slow cooker. Add chili powder, paprika, cumin, salt and black pepper.

Pour in Water

  • Add six cups of water over the beans and spices. Stir gently with a wooden spoon so everything mixes evenly inside.

Add Bay Leaves

  • Drop the bay leaves into the slow cooker. These leaves give the beans a deeper and richer flavor while cooking slowly.

Cook the Pinto Beans

Check the Texture

Remove the Ham Hock

  • Take out the ham hock and bay leaves. Shred any meat from the ham hock and return it to the beans.
