Ingredients
  

  • Unsalted butter – 3 tablespoons
  • Onion – 1 medium chopped
  • Garlic – 2 cloves minced
  • All-purpose flour – 3 tablespoons
  • Beer – 1 cup
  • Chicken broth – 3 cups
  • Whole milk – 1 cup
  • Heavy cream – ½ cup
  • Sharp cheddar cheese – 2 cups shredded
  • Cream cheese – 4 oz softened
  • Dijon mustard – 1 teaspoon
  • Paprika – ½ teaspoon
  • Salt – to taste
  • Black pepper – to taste

Instructions
 

Cook the Onion and Garlic

  • Melt butter in a large pot over medium heat. Add chopped onion and garlic. Cook slowly until soft and fragrant. Stir often to avoid browning.

Make the Roux

  • Sprinkle flour over the cooked onion mixture. Stir constantly for two minutes. This step removes raw flour taste and helps thicken the soup.

Add Beer and Broth

  • Slowly pour beer into the pot while whisking. Add chicken broth next. Stir well and let the mixture simmer gently for five minutes.

Add Milk and Cream

  • Pour in milk and heavy cream. Stir gently and keep heat low. Do not boil, or dairy may separate and ruin texture.

Add Cheeses

  • Add cream cheese first and stir until melted. Slowly add shredded cheddar cheese. Stir gently until soup becomes smooth and creamy.

Season the Soup

  • Add Dijon mustard, paprika, salt and black pepper. Stir well. Taste and adjust seasoning if needed. Keep heat low.

Simmer and Serve

  • Let the soup simmer for five more minutes. Stir often to prevent sticking. Remove from heat and serve warm.
