Ingredients
  

  • 4 large baking potatoes
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup unsalted butter
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1/4 cup cooked and crumbled bacon
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions chopped (optional for garnish)

Instructions
 

Preheat the Oven

  • Preheat your oven to 200°C (400°F). Wash the potatoes and pat them dry. Place them directly on the oven rack or baking sheet. Bake until tender, about 45 minutes.

Prepare the Potatoes

  • Remove baked potatoes from the oven. Let them cool slightly. Cut each potato in half lengthwise. Scoop out the flesh into a mixing bowl, leaving a small edge of potato in the skin.

Make the Filling

  • Mash the potato flesh with butter, sour cream, milk, garlic powder, salt and pepper. Mix until creamy and smooth. Add shredded cheddar cheese and bacon. Stir gently to combine.

Assemble the Casserole

  • Spoon the potato mixture into a greased baking dish. Spread evenly across the dish. Sprinkle extra shredded cheddar cheese on top for a golden, cheesy crust.

Bake Until Golden

  • Place the casserole in the preheated oven. Bake for 20–25 minutes until the top is golden and bubbly. The edges should slightly crisp for extra texture.

Garnish and Serve

  • Remove casserole from oven. Let it cool for 5 minutes. Sprinkle chopped green onions on top if desired. Serve warm for the best creamy, cheesy flavor.

Notes

  • Use russet potatoes for best texture
  • Do not overmix the potato filling
  • Add more cheese for extra flavor
  • Cook bacon until crispy before adding
