Ingredients
  

  • 6 large russet potatoes
  • 4 tablespoons butter softened
  • 1 cup sour cream
  • ½ cup whole milk
  • 1 ½ cups shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 2 green onions chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Bake the Potatoes First

  • Preheat your oven to 400°F (200°C). Wash and dry the potatoes well. Prick each potato with a fork. Place them on a baking sheet. Bake for about 1 hour until tender.

Cool and Cut

  • Remove potatoes from the oven carefully. Let them cool for 10 minutes. Cut each potato in half lengthwise. Use a spoon to scoop out the inside. Leave a thin layer inside the skin.

Mash the Filling

  • Place the scooped potato in a large bowl. Add butter, sour cream, milk, salt and pepper. Mash until smooth and creamy. Make sure there are no big lumps in the mixture.

Add Cheese and Bacon

  • Mix in one cup of shredded cheddar cheese. Add most of the crumbled bacon and green onions. Save some for topping later. Stir everything until well combined and creamy.

Fill the Potato Shells

  • Spoon the creamy mixture back into each potato shell. Fill them generously. Sprinkle the remaining cheese and bacon on top. This will create a golden, crispy topping.

Bake Again

  • Place the filled potatoes back on the baking sheet. Bake again at 375°F (190°C) for 15–20 minutes. Bake until cheese melts and tops look golden and slightly crispy.

Garnish and Serve
