Ingredients
  

  • 2 lbs chicken breast cut into bite-sized pieces
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cans 15 oz white beans, drained and rinsed
  • 1 can 4 oz green chilies
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup corn fresh or frozen
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional: 1 lime juice only
  • Optional: 1 cup shredded Monterey Jack cheese
  • Optional: Fresh cilantro for garnish

Instructions
 

Heat oil in a pot

  • Add olive oil to a large pot. Heat over medium heat until warm.

Cook onions and garlic

  • Add chopped onion and garlic. Sauté until soft and fragrant.

Add chicken pieces

  • Add chicken to the pot. Cook until no longer pink.

Add spices

  • Stir in cumin, oregano, chili powder, salt and pepper. Mix well.

Add beans and chilies

  • Add white beans and green chilies to the pot. Stir to combine.

Pour in chicken broth

  • Add chicken broth and bring to a simmer. Let it cook for 20 minutes.

Add corn and cream

  • Stir in corn and heavy cream. Cook for 10 more minutes.

Finish with lime and cheese

  • Add lime juice and cheese if using. Stir until melted and creamy.

Notes

  • Use rotisserie chicken for a faster version.
  • For extra heat, add jalapeños or cayenne.
  • Blend some beans for a thicker broth.
