Ingredients
  

  • 4 medium potatoes peeled and chopped
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 6 cups water or broth
  • 1 cup thinly sliced kale
  • 1 smoked sausage sliced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Prepare the Pot

  • Heat olive oil in a large pot. Keep heat medium and steady.

Cook Onion and Garlic

  • Add onion and garlic. Cook until soft and lightly fragrant.

Add Potatoes

  • Add chopped potatoes to the pot. Stir gently with onions.

Pour in Liquid

  • Add water or broth. Bring the pot to a gentle boil.

Simmer the Soup

  • Lower heat and simmer for twenty minutes. Potatoes should be very soft.

Blend the Soup

  • Blend soup until smooth. You can also mash potatoes carefully.

Add Sausage

  • Add sliced sausage to the pot. Stir well and cook five minutes.

Add Kale

  • Add sliced kale. Cook until tender but still bright green.

Season the Soup

  • Add salt and pepper. Taste and adjust seasoning gently.

Rest and Serve

  • Turn off heat. Let soup rest five minutes before serving.

Notes

  • Slice kale very thin for best texture.
  • Use smoked sausage for deeper flavor.
  • Do not overcook the kale.
  • Blend soup until very smooth.
  • Taste before adding extra salt.
