- 1 cup dried green or brown lentils
- 1 tbsp olive oil
- 1 medium onion chopped
- 2 carrots diced
- 2 celery stalks diced
- 2 garlic cloves minced
- 1 can diced tomatoes 14 oz
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp paprika
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley for garnish
Rinse lentils under cold water until clear.
Heat olive oil in a large pot.
Add onion, carrots, and celery. Cook until soft.
Stir in garlic and cook for one minute.
Add diced tomatoes and mix well.
Add lentils, vegetable broth, and spices.
Bring to a boil, then lower heat.
Simmer for 30–35 minutes until lentils are tender.
Remove bay leaf before serving.
Garnish with fresh parsley and serve warm.
- Use brown or green lentils as they hold shape well.
- Rinse lentils properly to remove extra starch.
- Add a splash of lemon juice before serving for freshness.
- For extra protein, add cooked sausage or chicken.
