Ingredients

  • 2 cups cooked shredded chicken (rotisserie or boiled)
  • 8 oz 1 package cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise or ranch dressing optional, for extra creaminess
  • cup buffalo wing sauce or hot sauce
  • 1 cup shredded cheddar cheese or a mix of cheddar + Monterey Jack
  • ½ cup crumbled blue cheese optional, for that tangy bite
  • 1 –2 green onions chopped (for garnish)
  • Salt and pepper to taste

Instructions

Prep the Chicken

  • Shred your cooked chicken using two forks until it’s in bite-size pieces.

Mix the Cream Base

  • In a bowl, beat together the cream cheese, sour cream, and mayonnaise (or ranch) until smooth.

Add the Buffalo Sauce

  • Pour in the buffalo wing sauce. Stir well so the cream base gets a spicy, even color.

Add the Chicken

  • Fold in the shredded chicken carefully, distributing it evenly through the creamy sauce.

Stir in the Cheese

  • Add most of the shredded cheddar cheese, reserving a little for the top. Mix gently.

Add Blue Cheese (Optional)

  • If you like tangy flavor, fold in the crumbled blue cheese into the dip.

Season

  • Taste, and then add a pinch of salt and pepper if needed. Be careful: the cheese and sauce already add flavor.

Choose Cold or Baked Option

  • Cold version: Transfer the dip to a serving bowl and chill for at least 30 minutes to firm up.
  • Baked version: Preheat your oven to 375°F (190°C). Spread the dip in a baking dish, sprinkle the remaining cheese on top.

Bake (if using oven)

  • Bake for about 20 minutes or until the cheese is melted and the dip is hot and bubbly.

Garnish and Serve

  • Remove from oven or fridge. Top with chopped green onions. Serve with celery sticks, crackers, tortilla chips or pita bread.

Notes

  • Use rotisserie chicken to save time.
  • Let cream cheese soften at room temperature for easier mixing.
  • Adjust buffalo sauce to control the spice level.
  • Use a mix of cheeses for a richer flavor.
  • For an extra creamy dip, use full-fat sour cream.
  • If dip is too thick, stir in a spoon of milk or more sour cream.
