Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 can 15 oz pumpkin puree
  • 3/4 cup sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 3 large eggs
  • 1 can 12 oz evaporated milk
  • Whipped cream for serving optional

Instructions

Preheat Oven

  • Set oven to 425°F (220°C) and place the rack in the center.

Prepare Pie Crust

  • Place unbaked pie crust in a 9-inch pie pan. Press gently into the pan.

Mix Pumpkin and Spices

  • In a bowl, combine pumpkin puree, sugar, cinnamon, ginger, nutmeg, cloves, and salt. Stir until well blended.

Add Eggs

  • Beat eggs lightly and add to pumpkin mixture. Mix well until smooth and uniform.

Add Evaporated Milk

  • Gradually stir in evaporated milk. Mix until filling is creamy and smooth.

Pour Filling into Crust

  • Pour the pumpkin mixture into the prepared pie crust. Spread evenly with a spatula.

Bake at High Temperature

  • Bake at 425°F (220°C) for 15 minutes to set the crust and start cooking filling.

Reduce Heat

  • Lower oven temperature to 350°F (175°C). Continue baking for 35–40 minutes until filling is set.

Check Doneness

  • Insert a knife near the center. It should come out clean. Avoid overbaking to keep creamy texture.

Cool the Pie

  • Remove pie from oven and let it cool completely on a wire rack.

Chill Before Serving

  • Refrigerate for at least 2 hours for the filling to firm up and flavors to develop.

Serve

  • Slice the pie and serve with whipped cream if desired. Enjoy warm or chilled.

Notes

  • Use canned pumpkin puree for smooth filling.
  • Do not overmix eggs to avoid cracks in the pie.
  • Use a pie shield to prevent crust edges from burning.
  • Let pie cool completely for best texture and flavor.
  • Serve with whipped cream or ice cream for extra indulgence.
