Ingredients
  

  • 6 medium potatoes peeled and diced
  • 1 small onion chopped
  • 2 tablespoons butter
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 slices bacon cooked and crumbled
  • 2 green onions sliced (for garnish)

Instructions
 

Step 1: Cook potatoes

  • Place diced potatoes in a pot. Add chicken broth. Cook until soft.

Step 2: Sauté onion

  • In a pan, melt butter. Add onion and cook until soft.

Step 3: Mash potatoes

  • Lightly mash cooked potatoes in broth. Leave small chunks.

Step 4: Add flavors

  • Stir in onion, garlic powder, salt, and black pepper.

Step 5: Add cream

  • Pour in heavy cream. Stir until smooth and creamy.

Step 6: Add cheese

  • Mix in shredded cheddar cheese until melted.

Step 7: Finish soup

  • Stir in sour cream. Let the soup simmer for a few minutes.

Step 8: Serve

  • Ladle soup into bowls. Top with bacon and green onions.

Notes

  1. Use russet potatoes for the creamiest texture.
  2. Do not over-mash potatoes; small chunks add texture.
  3. For extra flavor, use sharp cheddar cheese.
  4. Add more broth if soup feels too thick.
  5. Top with crackers for added crunch.
