Ingredients
  

  • 2 cups raisin bran cereal
  • 1 cup milk
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 1 large egg
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup extra raisins optional

Soak the Cereal

  • In a bowl, mix raisin bran cereal and milk. Let it sit for 10 minutes. This softens the cereal and makes muffins moist and tender.

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Line a muffin tray with paper liners. This helps muffins bake evenly and prevents sticking.

Mix Wet Ingredients

  • Add egg, oil and vanilla extract into the soaked cereal mixture. Stir well until everything is fully combined and smooth.

Combine Dry Ingredients

  • In another bowl, mix flour, baking soda, salt and brown sugar. Stir well to remove lumps and blend evenly.

Make the Batter

  • Add dry ingredients into the wet mixture slowly. Stir gently. Do not overmix. Add extra raisins if you want more sweetness.

Fill Muffin Cups

  • Scoop batter into muffin liners. Fill each cup about two-thirds full. This gives space for muffins to rise properly.
