Red Velvet Cheesecake Brownies are soft, creamy and very pretty. This dessert looks fancy but is very easy to make. You get rich chocolate flavor with a smooth cheesecake swirl on top.

Ingredients
  

For the Brownie Layer:

  • 1/2 cup unsalted butter melted
  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup cocoa powder
  • 3/4 cup flour
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1/2 tsp salt

For the Cheesecake Layer:

  • 8 oz cream cheese softened
  • 1/3 cup sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions
 

Prepare the Pan

  • Line the baking pan with parchment paper. Leave extra paper on the edges for lifting later.

Mix Butter and Sugar

  • Whisk melted butter and sugar until smooth. Mix well until the mixture looks shiny and thick.

Add Eggs and Coloring

  • Add eggs and food coloring. Whisk slowly until the batter turns bright red and silky.

Add Dry Items

  • Mix in cocoa, flour and salt. Stir gently until everything blends without lumps.

Pour Most Batter

  • Pour most of the red batter into the pan. Save a little for the final swirl design.

Make Cheesecake Mix

  • Beat cream cheese, sugar, egg, and vanilla. Mix until the mixture becomes smooth and fluffy.

Add Cheesecake Layer

  • Pour the cheesecake mixture over the brownie batter. Spread gently to avoid mixing too much.

Add Swirl Topping

  • Drop remaining red batter on top. Use a toothpick to make swirls for a beautiful look.

Bake the Brownies

  • Bake at 350°F for about 30 minutes. Check with a toothpick for a slightly moist crumb.

Cool and Cut

  • Let the brownies cool fully. Lift them out and cut into neat squares for serving.
