Ingredients
  

  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ½ teaspoon peppermint extract or any flavor
  • Food coloring of your choice

Instructions
 

Prepare the surface

  • Place a silicone mat or lightly greased marble slab on the counter. Keep scissors nearby.

Heat sugar mixture

  • In a saucepan, mix sugar, corn syrup, and water. Cook over medium heat. Stir until sugar dissolves.

Boil to the right temperature

  • Stop stirring and let it boil until it reaches 295°F on the candy thermometer (hard crack stage).

Add flavor and color

  • Remove from heat. Quickly stir in your extract and food coloring. Mix gently.

Pour and cool

  • Pour a thin strip of the mixture onto the prepared surface. Let it cool until it’s warm but still flexible.

Shape into ribbons

  • Using gloves, pull and fold the candy into ribbon shapes while it’s still soft. Cut into pieces before it hardens.

Let it set

  • Allow the candy ribbons to cool completely until hard and shiny.

  • Use a candy thermometer for the right texture.
  • Work fast before the candy hardens.
  • Wear heatproof gloves to protect your hands.
  • Keep your kitchen cool; humidity can make candy sticky.
