Ingredients
  

  • 4 medium carrots peeled
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • 1 tbsp chopped fresh parsley
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp toasted almonds or walnuts optional

Instructions
 

Prepare the Carrots

  • Peel the carrots. Use a vegetable peeler to make thin, long carrot ribbons for a pretty salad.

Make the Dressing

  • In a small bowl, mix olive oil, lemon juice, honey, salt and black pepper. Whisk well until smooth.

Combine Carrots and Dressing

  • Place carrot ribbons in a large bowl. Pour the dressing over them. Toss gently to coat evenly.

Add Herbs

  • Add chopped parsley to the salad. Mix carefully to keep the carrot ribbons intact and pretty.

Add Nuts (Optional)

  • Sprinkle toasted almonds or walnuts on top for crunch. Toss lightly if desired for even distribution.

Taste and Adjust

  • Taste the salad. Add more salt, pepper or lemon juice if needed. Adjust to your personal flavor preference.
