- 2 Egg whites
- 250 g Ground almonds
- 250 g Icing sugar
- 1/2 teaspoon Almond extract
- Red food coloring (optional)
- Whole almonds (for decoration)
- 1 pinch Salt
Preheat the oven to 160°C (320°F); line the sheet with parchment paper.
Mix ground almonds and icing sugar in a bowl.
Add almond extract; combine thoroughly.
In a separate bowl, whisk egg whites to soft peaks.
Gently fold egg whites into the almond mixture; add food coloring if desired.
Roll mixture into balls; shape into rosette pattern on sheet.
Decorate each rosketti with a whole almond in the center.
Bake for 12-15 minutes until lightly golden around the edges.
Cool on a wire rack after baking.
Enjoy homemade rosketti with tea or coffee!
