Ingredients
  

  • 2 pounds fresh spinach washed and trimmed
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk warm
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup cream cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon nutmeg
  • Salt and black pepper to taste

Instructions
 

Step 1:

  • Bring a large pot of water to a boil. Add spinach and cook for 1–2 minutes until wilted.

Step 2:

  • Drain spinach in a strainer. Squeeze out excess water and chop finely.

Step 3:

  • In a medium saucepan, melt butter over medium heat.

Step 4:

  • Add flour and whisk to make a smooth roux.

Step 5:

  • Slowly add warm milk while whisking constantly. Cook until slightly thick.

Step 6:

  • Add heavy cream, Parmesan and cream cheese. Stir until melted and smooth.

Step 7:

  • Season with garlic powder, onion powder, nutmeg, salt and pepper.

Step 8:

  • Add chopped spinach and stir well to combine.

Step 9:

  • Simmer for 5 minutes on low heat before serving.

Notes

  • Use fresh spinach for the best flavor and texture.
  • Warm milk prevents lumps when making the roux.
  • Add more Parmesan for stronger cheesy flavor.
  • For a lighter version, use half-and-half instead of cream.
  • Make ahead and reheat gently before serving.
