Ingredients
  

  • 3 pounds beef brisket
  • 1/2 cup coarse salt
  • 1/4 cup brown sugar
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • 3 bay leaves
  • 4 garlic cloves crushed
  • 1 onion sliced
  • Water to cover the beef
  • Optional: carrots and potatoes for serving

Instructions
 

Prepare the beef

  • Rinse the brisket under cold water. Pat dry with a clean towel.

Make the brine

  • Mix salt, sugar, peppercorns, mustard seeds and coriander seeds in a bowl.

Brine the beef

  • Rub the mix all over the brisket. Place it in a container. Cover with water.

Add flavors

  • Add garlic, onion, and bay leaves to the container. Keep the beef fully covered.

Refrigerate the beef

  • Place the container in the fridge. Let it brine for two to three days.

Rinse the beef

  • Take the beef out of the brine. Rinse lightly under cold water.

Prepare the pot

  • Place the beef in a large pot. Add fresh water to cover the meat.

Add seasonings

  • Add new bay leaves, garlic, and peppercorns. These add more flavor.

Start cooking

  • Turn heat to medium. Bring the pot to a gentle boil slowly.

Simmer the beef

  • Reduce heat to low. Cover and let it cook for three hours.

Check the beef

  • Pierce with a fork. It should feel soft and tender when ready.

Remove from pot

  • Lift the beef carefully. Place it on a board or plate to rest.

Slice the beef

  • Slice across the grain. This keeps the pieces soft and easy to chew.

Prepare optional sides

  • Boil carrots and potatoes in the beef broth if you want.

Serve warm

  • Place slices on a plate with sides or in a warm sandwich.
