Carrot cake is my favorite dessert. It is soft, sweet, and full of flavor. The Saltgrass Carrot Cake Recipe is special.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 cups grated carrots
  • 1 cup chopped walnuts optional
  • 1 cup raisins optional

Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Step 1: Prepare the Oven and Pans

  • Preheat the oven to 350°F. Grease two baking pans. Put parchment paper inside.

Step 2: Mix Dry Ingredients

  • In a bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

Step 3: Mix Wet Ingredients

  • In another bowl, beat eggs, sugars, vanilla, and oil. Mix until smooth.

Step 4: Combine Everything

  • Slowly add dry ingredients to the wet mixture. Stir gently.

Step 5: Add Carrots and Nuts

  • Add grated carrots, walnuts, and raisins. Mix lightly.

Step 6: Bake the Cake

  • Pour the batter into pans. Bake for 30-35 minutes. Check with a toothpick. It should come out clean.

Step 7: Cool the Cake

  • After baking, cool the cakes in the pans for 10 minutes before moving them to a rack.

Step 8: Make the Frosting

  • Beat cream cheese and butter until smooth. Add vanilla and powdered sugar. Mix well.

Step 9: Frost the Cake

  • Spread frosting on one cake layer. Place the second layer on top. Frost the top and sides.
