Ingredients
  

  • 2 tablespoons vegetable oil
  • 2 pounds pork shoulder cut into cubes
  • ½ cup chopped onion
  • 3 garlic cloves minced
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups roasted green chiles Hatch chiles if you can
  • 1 jalapeño chopped (optional)
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • 1 tablespoon cornstarch optional, for thicker chili

Instructions
 

  • Step 1: Heat oil in a pot.
  • Step 2: Add pork. Brown it on all sides.
  • Step 3: Add onion and garlic. Cook until soft.
  • Step 4: Sprinkle flour. Stir for one minute.
  • Step 5: Slowly pour chicken broth. Stir well.
  • Step 6: Add green chiles and jalapeño. Stir.
  • Step 7: Add cumin, salt, pepper, and oregano.
  • Step 8: Let it boil gently.
  • Step 9: Lower heat. Cook for 1 hour.
  • Step 10: Add cornstarch if it needs thickening.
  • Step 11: Stir and cook for 5 more minutes.
  • Step 12: Serve hot with your favorite sides.

Notes

  • Use Hatch green chiles for best taste.
  • Brown pork well for extra flavor.
  • Let it simmer longer for soft meat.
  • Add jalapeño only if you like heat.
  • Stir often so it doesn't burn.
