Ingredients
  

  • 8 rice paper sheets
  • 12 large shrimp cooked, cut in half
  • 1 cup lettuce shredded
  • 1 small carrot thin slices
  • ½ cucumber thin slices
  • ¼ cup mint leaves
  • ¼ cup cilantro leaves
  • ½ cup vermicelli noodles cooked
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp peanut butter for dip

Instructions
 

  • Fill a bowl with warm water.
  • Dip one rice paper in water for 10 seconds.
  • Place the sheet flat on a towel.
  • Add shrimp halves in the center.
  • Add lettuce, carrot, cucumber, and noodles.
  • Add mint and cilantro leaves.
  • Fold bottom edge over filling.
  • Fold sides and roll tightly.
  • Repeat with all sheets.
  • Serve with hoisin-peanut dip.

Notes

  • Do not soak paper too long.
  • Use fresh shrimp for best taste.
  • Cut veggies into thin slices.
  • Roll tightly to keep fillings inside.
  • Serve rolls fresh, not stored long.
