Ingredients
  

  • 4 salmon fillets 6 oz each, skin removed
  • ½ pound shrimp peeled, deveined, and chopped
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • ½ cup cream cheese softened
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
  

Preheat the Oven

  • Set the oven to 375°F (190°C). Lightly grease your baking tray.

Prepare the Shrimp Filling

  • Melt butter in a skillet. Add garlic and chopped shrimp. Cook for 2–3 minutes until shrimp turn pink. Remove from heat.
  • In a bowl, mix cream cheese, Parmesan, lemon juice, parsley, salt and pepper. Add cooked shrimp and stir.

Cut Salmon Pockets

  • Using a sharp knife, cut a slit in the side of each salmon fillet to make a pocket. Be careful not to cut all the way through.

Fill the Salmon

  • Spoon the shrimp mixture inside each salmon pocket. Press lightly to keep it closed.

Cook the Salmon

  • Heat olive oil in a pan. Sear each fillet for 2 minutes on each side. Then transfer to the oven and bake for 15–18 minutes until salmon flakes easily.

Serve and Enjoy

  • Serve warm with lemon wedges or your favorite side dish.

Notes

  • Use fresh shrimp for the best flavor.
  • Do not overcook the salmon; it can become dry.
  • Let the cream cheese soften before mixing.
  • Add a pinch of cayenne for a spicy kick.
  • Brush salmon with olive oil for a golden finish.
