Ingredients
  

  • 1 large fresh orange washed, seeds removed, cut into pieces
  • 3 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup milk

Prepare the Oven and Pan

  • Preheat your oven to 350°F (175°C). Line an 8-inch cake pan with parchment paper. Lightly grease the sides with oil or butter so the cake does not stick.

Prepare the Orange

  • Wash the orange well because the peel will be used. Cut the orange into small pieces. Remove any seeds. Put the orange pieces into a blender.

Blend the Orange Mixture

  • Add eggs, sugar and oil into the blender with the orange pieces. Blend until the mixture becomes smooth. The orange peel should break down completely.

Mix Dry Ingredients

  • In a large mixing bowl, add flour, baking powder and salt. Stir them well using a spoon or whisk. This step helps the cake bake evenly.

Combine Wet and Dry Ingredients

  • Pour the orange mixture into the bowl of dry ingredients. Add milk and vanilla extract. Mix gently with a spatula until the batter becomes smooth.

Pour Batter into Pan

  • Pour the prepared batter into the lined cake pan. Smooth the top using a spatula so the batter spreads evenly.
