Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 cup creamy peanut butter
  • 1 cup coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon fresh ginger grated
  • 3 cloves garlic minced
  • 1 tablespoon lime juice
  • ½ teaspoon red chili flakes
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons chopped peanuts for garnish
  • 2 tablespoons fresh cilantro for garnish

Instructions
 

Prepare the Chicken

  • Trim any extra fat from the chicken thighs. Pat them dry with paper towels. Place them evenly at the bottom of the slow cooker. This helps them cook evenly.

Make the Peanut Sauce

  • In a mixing bowl, add peanut butter, coconut milk, soy sauce and honey. Add ginger, garlic, lime juice, chili flakes and pepper. Whisk until smooth and creamy.

Pour the Sauce

  • Pour the peanut sauce over the chicken in the slow cooker. Make sure all pieces are well covered. Use a spoon to spread the sauce evenly.

Slow Cook

  • Cover the slow cooker with the lid. Cook on low for 4 hours. The chicken will become tender and absorb all the delicious flavors from the sauce.

Thicken the Sauce

  • Mix cornstarch and water in a small bowl. Pour this mixture into the slow cooker. Stir gently. Cook for another 20 minutes until the sauce thickens nicely.

Shred or Serve Whole

  • You can leave the chicken whole or shred it with two forks. Stir the shredded chicken into the thick peanut sauce before serving.

Garnish and Serve

  • Sprinkle chopped peanuts and fresh cilantro on top. Serve warm over rice or noodles. Add extra lime wedges if you like more fresh flavor.

Notes

  • Use chicken thighs for more flavor and tenderness.
  • Stir the sauce well before pouring it over chicken.
  • Adjust chili flakes for more or less spice.
  • Add sliced bell peppers for extra vegetables.
  • If sauce is too thick, add a little warm water.
  • Taste before serving and adjust salt if needed.
