Ingredients
  

  • 2 pounds pork loin
  • 1 can pineapple chunks with juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon cornstarch optional for thickening

Instructions
 

Prepare the Pork Loin

  • Trim extra fat from the pork loin. Pat it dry and season lightly with salt and pepper.

Mix the Sauce

  • Combine pineapple juice, brown sugar, soy sauce and garlic. Stir until the sugar fully dissolves.

Place Pork in Slow Cooker

  • Set the pork loin in the slow cooker. Make sure it sits flat in the center.

Add Pineapple Chunks

  • Pour pineapple chunks over the pork. Spread them evenly for full sweet flavor.

Pour the Sauce

  • Pour the prepared sauce over the pork. Make sure the pork is well covered.

Cook Slowly

  • Cook on low for six hours. Let the pork cook gently until soft and tender.

Thicken the Sauce

  • Remove pork. Mix cornstarch with water. Add to sauce and heat until slightly thick.

Slice and Serve

  • Slice the pork. Pour the warm pineapple sauce on top. Serve fresh and enjoy.

Notes

  • Do not overcook the pork or it may dry.
  • Use pineapple chunks, not crushed pineapple, for better texture.
  • If you like spicier flavor, add a little chili sauce.
  • You can add onions or bell peppers for more taste.
  • Let the pork rest before slicing to keep it juicy.
