Ingredients
  

  • pounds ground beef
  • 2 jalapeños seeded and chopped
  • 4 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup smoky barbecue sauce

Instructions
 

Preheat the Oven

  • Preheat oven to 375°F. Grease loaf pan lightly and set aside.

Prepare Jalapeños

  • Chop jalapeños finely. Remove seeds for less heat.

Mix Wet Ingredients

  • In a bowl, mix egg, milk, cream cheese and barbecue sauce.

Add Seasonings

  • Add smoked paprika, garlic powder, onion powder, salt and pepper. Stir well.

Combine Meat

  • Add ground beef and breadcrumbs. Mix gently until just combined.

Add Cheese and Peppers

  • Fold in cheddar cheese and chopped jalapeños evenly.

Shape the Meatloaf

  • Press mixture into loaf pan. Smooth the top gently.

Bake the Meatloaf

  • Bake for fifty minutes. Meatloaf should be cooked through.

Rest Before Serving

  • Let meatloaf rest ten minutes. Slice and serve warm.
