Ingredients
  

  • 3 ripe bananas mashed
  • ½ cup unsalted butter melted
  • ¾ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

For Cinnamon Sugar Topping

  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon

Instructions
 

Preheat the oven

  • Set oven to 350°F. Grease the loaf pan well. This helps bread release easily after baking.

Mash the bananas

  • Place bananas in a bowl. Mash until smooth. Small lumps are fine for texture.

Mix wet ingredients

  • Add melted butter, sugar, egg and vanilla. Whisk until mixture looks smooth and shiny.

Combine dry ingredients

  • In another bowl, mix flour, baking soda, salt and cinnamon until evenly blended.

Mix batter gently

  • Add dry mixture into wet ingredients. Stir slowly until just combined. Do not overmix.

Prepare cinnamon topping

  • Mix sugar and cinnamon in a small bowl. This creates the classic snickerdoodle topping.

Fill the pan

  • Pour batter into loaf pan. Spread evenly. Sprinkle cinnamon sugar generously on top.

Bake the bread

  • Bake for fifty minutes. Check with toothpick. It should come out mostly clean.

Cool before slicing

  • Let bread cool ten minutes. Remove from pan. Slice when warm or fully cooled.

Notes

  • Use very ripe bananas for best sweetness.
  • Do not overmix batter or bread becomes dense.
  • Cover loosely if top browns too fast.
  • Add nuts for extra crunch if desired.
