Ingredients
  

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup unsalted butter softened
  • 1 cup brown sugar
  • 1 large egg
  • ¼ cup molasses
  • ¼ cup granulated sugar for rolling

Instructions
 

Preheat Oven

  • Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper to prevent sticking.

Mix Dry Ingredients

  • In a bowl, combine flour, baking soda, ginger, cinnamon, cloves and salt. Stir well to mix evenly.

Cream Butter and Sugar

  • In another bowl, beat butter and brown sugar until light and fluffy. Use an electric mixer or whisk.

Add Egg and Molasses

  • Add egg and molasses to the butter mixture. Beat until fully combined and smooth.

Combine Wet and Dry Ingredients

  • Gradually add dry ingredients to wet ingredients. Mix gently until dough forms a soft, sticky ball.

Shape the Cookies

  • Roll dough into 1-inch balls. Roll each ball in granulated sugar for a sweet, sparkling coating.

Place on Baking Tray

  • Place cookie balls on the prepared baking tray. Leave 2 inches between each cookie for spreading.

Bake the Cookies

  • Bake in preheated oven for 8–10 minutes. Cookies should be soft in the center and slightly crisp outside.

Cool the Cookies

  • Remove cookies from oven. Let them cool on the tray for 5 minutes. Transfer to a cooling rack to cool completely.

  • Do not overbake; cookies stay soft if removed on time.
  • Chill dough slightly if too sticky to roll.
