Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce
  • ½ teaspoon Cajun seasoning
  • ¼ teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Chopped green onions for garnish

Instructions
 

Boil the Eggs

  • Place eggs in a saucepan. Cover with water. Boil for ten minutes until fully cooked.

Cool the Eggs

  • Drain hot water. Place eggs in cold water. Let them cool completely before peeling.

Peel the Eggs

  • Gently peel the shells. Rinse eggs to remove small shell pieces.

Cut the Eggs

  • Slice eggs in half lengthwise. Remove yolks carefully. Place yolks in a bowl.

Mash the Yolks

  • Mash yolks with a fork. Make them smooth and crumb free.

Add Creamy Ingredients

  • Add mayonnaise and mustard to yolks. Mix until creamy and smooth.

Add Spice

  • Add hot sauce, Cajun seasoning, paprika, salt and pepper. Mix well until blended.

Fill the Egg Whites

  • Spoon or pipe filling into egg whites. Fill generously for best flavor.

Garnish and Serve

  • Top with green onions and paprika. Chill briefly before serving if desired.
