Ingredients
  

  • 4 cups chopped yellow squash
  • 2 cups chopped onions
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1 tablespoon salt
  • 1 cup white vinegar
  • 1 cup sugar
  • 1 teaspoon turmeric
  • 1 teaspoon mustard seeds
  • ½ teaspoon black pepper

Instructions
 

Prepare the Vegetables

  • Chop the squash, onions and peppers into small pieces. Try to keep the size even for better texture.

Salt the Mix

  • Place the chopped vegetables in a large bowl. Sprinkle salt and mix well to draw out extra moisture.

Let It Sit

  • Let the salty vegetable mix rest for one hour. This helps soften the vegetables and improves the final flavor.

Rinse and Drain

  • Rinse the vegetables under cold water. Drain well in a colander to remove extra salt and liquid.

Heat the Liquid

  • Place vinegar, sugar, turmeric, mustard seeds, and black pepper in a large pot. Heat until the sugar melts.

Add the Vegetables

  • Add the drained vegetables to the pot. Stir well to coat every piece in the hot vinegar mixture.

Cook the Relish

  • Simmer the mixture for 20 minutes. Stir sometimes to prevent burning and let flavors blend smoothly.

Fill Jars Carefully

  • Spoon the hot relish into sterilized jars. Leave a little space at the top to allow settling.

Seal the Jars

  • Place lids tightly on the jars. Make sure they are sealed well to keep the relish fresh.

Cool and Store

  • Let the jars cool fully. Store them in the fridge or pantry for later use.
