Ingredients

  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 3 garlic cloves minced
  • 1 can crushed tomatoes 28 ounces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes optional
  • 1 teaspoon sugar optional
  • Fresh basil leaves a small handful
  • ½ cup water if needed

Instructions

Heat the Oil

  • Place a saucepan over medium heat. Add olive oil and let it warm gently until it shimmers slightly around the edges.

Cook the Onion

  • Add chopped onion to the pan. Stir slowly and cook until soft and clear, which releases sweetness and builds deep flavor.

Add the Garlic

  • Add minced garlic and cook briefly. Stir for thirty seconds so it softens but does not burn, because burnt garlic tastes bitter.

Add Tomatoes

  • Pour in the crushed tomatoes. Stir well to mix with onion and garlic and scrape any browned bits from the bottom for flavor.

Season the Sauce

  • Add salt, pepper, oregano and red pepper flakes if using. Stir gently so spices spread evenly and begin flavoring the sauce.

Simmer Slowly

  • Reduce heat to low and let sauce simmer for about twenty minutes. Stir sometimes so it does not stick and cooks evenly without burning.

Add Basil and Adjust Taste

  • Tear fresh basil leaves and stir in. Taste the sauce and add sugar if tomatoes are very acidic, or water if it feels too thick.

Rest and Serve

  • Turn off heat and let the sauce sit for a few minutes. Resting allows flavors to blend smoothly, giving rich and balanced taste.

Notes

  • Use good canned tomatoes for best taste
  • Simmer slowly for richer flavor
  • Do not burn garlic or sauce becomes bitter
  • Fresh basil gives bright fresh flavor
  • Add butter for extra smooth texture
  • Blend sauce for a smoother style if you like
  • Double the recipe and freeze extra sauce
