Ingredients
  

  • 2 ciabatta rolls or crusty Italian rolls
  • 4 slices provolone cheese
  • 6 to 8 slices prosciutto or salami
  • 1 cup fresh arugula leaves
  • 2 tablespoons extra virgin olive oil
  • 1 small tomato thinly sliced
  • 1 teaspoon balsamic vinegar
  • Salt to taste
  • Black pepper to taste
  • 1 garlic clove cut in half optional
  • 2 tablespoons pesto or mayonnaise optional

Prepare the Bread

  • Slice the ciabatta rolls in half. Lightly rub cut sides with garlic if you like stronger flavor for the sandwich.

Toast the Bread

  • Place bread on a pan or grill pan. Toast until warm and lightly crisp, which adds great texture and keeps fillings from getting soggy later.

Make the Simple Dressing

  • In a bowl mix olive oil, balsamic vinegar, salt and pepper. Whisk gently so oil and vinegar combine into one smooth dressing.

Add Cheese to Bread

  • Place provolone slices on warm bread halves. The heat softens the cheese slightly and gives the sandwich a rich creamy bite without melting completely.

Layer the Meat
