Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 cup pineapple chunks fresh or canned, drained
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1/2 cup ketchup
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 red bell pepper chopped
  • 1 small onion chopped

Instructions
 

Prepare the Chicken

  • Place the chicken breasts at the bottom of the crockpot. Make sure they are spread evenly. This helps them cook evenly and absorb all the sweet Hawaiian flavors.

Make the Sauce

  • In a mixing bowl, combine pineapple juice, brown sugar, soy sauce and ketchup. Add minced garlic and grated ginger. Stir well until the sugar dissolves completely.

Add Vegetables and Pineapple

  • Pour the sauce over the chicken in the crockpot. Add pineapple chunks, chopped bell pepper and onion on top. Do not stir too much at this stage.

Cook Slowly

  • Cover the crockpot with the lid. Cook on low for 4–6 hours or high for 2–3 hours. The chicken should become tender and fully cooked.

Thicken the Sauce

  • In a small bowl, mix cornstarch with water. Pour this mixture into the crockpot during the last 30 minutes. Stir gently and let the sauce thicken.

Shred or Serve Whole

  • Once cooked, you can shred the chicken with two forks or serve whole pieces. Spoon extra sauce over the top before serving.

Notes

  • Use chicken thighs for extra juicy meat.
  • Do not overcook, or chicken may dry out.
  • Adjust sugar if you prefer less sweetness.
  • Fresh pineapple gives brighter flavor.
  • Stir sauce gently to avoid breaking chicken.
