Ingredients
  

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter softened
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

For Filling:

  • 1/2 cup peach jam
  • 1/4 cup cream cheese softened

For Decoration:

  • 1/2 cup peach juice or syrup
  • Red and yellow food coloring
  • 1/4 cup sugar for coating
  • Fresh mint leaves optional

Prepare the Dough

  • In a mixing bowl, add butter and sugar. Beat until light and fluffy. Add eggs and vanilla extract. Mix well. Add flour and baking powder gradually. Mix until soft dough forms.

Shape the Cookies

  • Take small portions of dough. Roll into small balls. Place them on a lined baking tray. Leave space between each ball. Slightly flatten them for even baking.

Bake the Cookies

  • Preheat oven to 180°C. Bake cookies for about 15–20 minutes. They should stay light in color. Do not overbake. Let them cool completely before the next step.

Hollow the Centers

  • Use a small knife or spoon. Gently remove a small part from the bottom of each cookie. This creates space for filling. Be careful not to break them.

Prepare the Filling

  • In a bowl, mix peach jam and cream cheese. Stir until smooth and creamy. This filling adds flavor and moisture. It makes the cookies soft inside.

Assemble the Cookies

  • Fill each hollow cookie with the mixture. Press two cookies together to form a peach shape. Repeat with all cookies until done.

Color and Coat

  • Dip each cookie lightly in peach juice. Add a little food coloring for a peach look. Roll cookies in sugar. Let them dry slightly before serving.
