Ingredients
  

  • ½ cup chopped sweet onion
  • 1 tablespoon Dijon mustard
  • ¼ cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • ¾ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Prepare the Onion

  • Peel and chop a sweet onion. Vidalia or Walla Walla onions work best.

Blend the Ingredients

  • Add chopped onion, Dijon mustard, vinegar, honey, salt, and pepper to a blender. Blend until smooth.

Add the Olive Oil

  • While blending, slowly pour in olive oil. This helps the vinaigrette become creamy and well mixed.

Taste and Adjust

  • Taste the dressing. Add more honey for sweetness or more mustard for spice.

Store and Serve

  • Pour the vinaigrette into a jar. Chill for 30 minutes before serving to let flavors blend.
