Ingredients
  

  • 6 small tortillas
  • 6 eggs
  • 1 cup shredded cheese
  • 1 cup cooked sausage or cooked bacon
  • 1 small onion chopped
  • 1 small bell pepper chopped
  • 1 tablespoon oil
  • Salt to taste
  • Black pepper to taste
  • ½ cup salsa
  • Fresh cilantro for garnish

Instructions
 

Cook the Sausage

  • Heat oil in a skillet. Add sausage or bacon. Cook until brown and crisp.

Sauté the Veggies

  • Add onion and bell pepper. Cook until soft and lightly golden.

Whisk the Eggs

  • Crack eggs in a bowl. Whisk with salt and pepper until smooth.

Scramble the Eggs

  • Pour eggs into skillet. Cook slowly and stir until softly cooked.

Prepare the Tortillas

  • Warm tortillas slightly so they bend well and do not crack.

Fill the Tortillas

  • Add eggs, sausage and veggies into each soft tortilla evenly.

Add Cheese

  • Sprinkle cheese inside each tortilla. Use more if you love cheese.

Arrange in Baking Dish

  • Place filled tortillas in the baking dish. Keep them close together.

Bake the Tacos

  • Bake at 180°C (350°F). Bake until cheese melts and tops turn golden.

Garnish and Serve

  • Add salsa and cilantro. Serve warm and enjoy the soft cheesy tacos.

Notes

  • Use soft tortillas so they do not break while folding.
  • Add more veggies if you want extra color and crunch.
  • Use parchment paper for easy clean-up.
  • Add hot sauce if you like spicy flavors.
  • Bake a few minutes longer for crispier edges.
