Ingredients
  

  • 4 cups vegetable or chicken broth
  • 1 cup water
  • ½ block firm tofu cubed
  • 1 small onion sliced
  • 1 medium carrot thinly sliced
  • 1 zucchini sliced into half moons
  • 1 cup napa cabbage chopped
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp gochujang Korean chili paste
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 green onion chopped for garnish

Instructions
 

Prepare the Ingredients

  • Wash and chop all the vegetables. Slice the onion, carrot, and zucchini thinly so they cook fast. Cut tofu into small cubes. Keep everything ready before cooking.

Heat the Oil

  • Place your pot on medium heat. Add sesame oil. When it’s warm, add minced garlic and ginger. Stir for 30 seconds until fragrant. This builds a lovely aroma for the soup.

Add the Vegetables

  • Add sliced onions, carrots, and zucchini to the pot. Stir well. Let them cook for 3–4 minutes until slightly soft. Then add chopped cabbage and mix again.

Add the Broth and Sauce

  • Pour in the broth and water. Stir in soy sauce and gochujang. Mix well until the chili paste dissolves completely. This gives the soup a beautiful red color and spicy flavor.

Simmer the Soup

  • Bring the soup to a boil. Then lower the heat and let it simmer for 10–12 minutes. The vegetables should be tender but not mushy.

Add the Tofu

  • Carefully add the tofu cubes. Stir gently so they don’t break. Let them cook for 5 minutes to absorb the flavor. Taste and adjust the seasoning with salt and pepper.

Garnish and Serve

  • Turn off the heat. Sprinkle chopped green onions on top. Serve hot in bowls. Enjoy your cozy Tasty Korean Winter Soup with rice or noodles.
