Ingredients
  

  • 4 boneless chicken thighs
  • 1 cup buttermilk
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 cloves garlic minced
  • 1 teaspoon chili paste or sriracha
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Oil for frying about 3 cups
  • 4 brioche or burger buns
  • 1 cup shredded cabbage
  • 1 small carrot grated
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon lime juice
  • Slices of cucumber optional

Instructions
 

Marinate the chicken

  • Add chicken, buttermilk, fish sauce, soy sauce, lime juice, garlic and chili paste. Mix gently and let rest for at least thirty minutes in the fridge.

Prepare the coating

  • In another bowl, mix flour, cornstarch, salt and pepper together very well. This blend helps make a crisp and light crust.

Heat the oil

  • Pour oil into a deep skillet or pot. Warm slowly over medium heat until bubbles form around a wooden spoon tip.

Coat the chicken

  • Remove chicken from marinade. Let excess drip off. Press each piece into the flour mix. Coat fully for crunchy texture after frying.

Fry the chicken

  • Place chicken pieces gently into hot oil. Cook in batches until golden and cooked through. Remove and drain on paper towels.

Make the sauce

  • In a small bowl, mix mayonnaise, sweet chili sauce, and lime juice. Stir until smooth. This becomes your creamy Thai sandwich spread.

Prepare the slaw

  • Combine cabbage, carrot, and cilantro in a bowl. Add a little lime juice and pinch of salt. Toss lightly for fresh crunch.

Toast the buns

  • Lightly toast buns in a pan or toaster. Warm buns hold fillings better and keep texture crisp and pleasant.

Assemble the sandwich

  • Spread sauce on both sides of buns. Add fried chicken, slaw and cucumber slices if using. Place top bun and press gently.

Serve immediately

  • Serve while hot and crispy. The contrast of crunchy chicken and cool slaw gives amazing flavor and texture in each bite.

  • Use chicken thighs for juicier meat
  • Double coat chicken for extra crunch
  • Keep oil medium hot to avoid burning
  • Do not crowd the pan while frying
