- 4 boneless chicken thighs
- 1 cup buttermilk
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 2 cloves garlic minced
- 1 teaspoon chili paste or sriracha
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper
- Oil for frying about 3 cups
- 4 brioche or burger buns
- 1 cup shredded cabbage
- 1 small carrot grated
- 1/4 cup fresh cilantro leaves
- 1/4 cup mayonnaise
- 1 tablespoon sweet chili sauce
- 1 teaspoon lime juice
- Slices of cucumber optional
Marinate the chicken
Add chicken, buttermilk, fish sauce, soy sauce, lime juice, garlic and chili paste. Mix gently and let rest for at least thirty minutes in the fridge.
Prepare the coating
