Ingredients
  

  • 1 cup grated Gruyère cheese
  • 1 cup grated Emmental cheese
  • 1 tablespoon cornstarch
  • 1 clove garlic cut in half
  • ¾ cup dry white wine
  • 1 teaspoon lemon juice
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg
  • 1 tablespoon kirsch optional

Instructions
 

Prepare the Cheese

  • Grate the Gruyère and Emmental cheese finely. Place them in a bowl. Add cornstarch and toss gently. This helps the cheese melt smoothly without clumping.

Rub the Pot with Garlic

  • Take the garlic halves and rub the inside of the saucepan. This gives a light garlic flavor. Discard the garlic after rubbing.

Heat the Wine

  • Pour white wine and lemon juice into the saucepan. Heat over medium heat until warm. Do not let it boil.

Add Cheese Slowly

  • Lower heat to medium-low. Add cheese mixture slowly, one handful at a time. Stir constantly in a figure-eight motion to prevent lumps.

Melt Until Smooth

  • Keep stirring gently until all cheese melts. The mixture should be smooth and creamy. Do not let it boil, or it may separate.

Add Seasoning

  • Add black pepper, nutmeg and kirsch if using. Stir well. Taste and adjust seasoning if needed.

Transfer to Fondue Pot

  • Pour the melted cheese into a fondue pot or serving bowl. Keep warm over low heat or a small burner to maintain smooth texture.

Serve Immediately

  • Serve hot with bread cubes and vegetables. Stir occasionally to keep it smooth and prevent sticking at the bottom.

Notes

  • Use freshly grated cheese for best melting.
  • Do not use pre-shredded cheese.
  • Keep heat low to prevent separation.
  • Stir constantly while melting.
  • If too thick, add a splash of warm wine.
  • If too thin, add a little more cheese.
