Ingredients
  

  • Potatoes – 5 pounds peeled and cubed
  • Butter – ½ cup
  • Garlic – 3 cloves minced
  • Chicken broth – 1 cup
  • Heavy cream – ¾ cup
  • Cream cheese – 4 ounces
  • Salt – 1½ teaspoons
  • Black pepper – ½ teaspoon
  • Fresh chives – 2 tablespoons chopped

Instructions
 

Prepare the Potatoes

  • Peel the potatoes and cut them into even cubes. This helps them cook evenly. Rinse with water to remove extra starch. Place all potatoes inside the crockpot carefully.

Add Butter and Garlic

  • Add butter pieces over the potatoes. Sprinkle minced garlic on top. Pour chicken broth gently inside. This adds flavor and keeps potatoes moist during cooking.

Slow Cook the Potatoes

  • Cover the crockpot with a lid. Cook on high for four hours. Potatoes should be very soft and easy to mash.

Add Cream and Cheese

  • Add heavy cream and cream cheese to the cooked potatoes. Let them sit for five minutes. This helps the cheese melt nicely.

Mash Until Smooth

  • Use a potato masher or hand mixer. Mash until smooth and creamy. Add salt and black pepper. Mix well until everything is combined.

Garnish and Serve

  • Sprinkle fresh chives on top. Taste and adjust seasoning if needed. Serve warm directly from the crockpot.
