Ingredients
  

  • Chicken breast – 500 grams diced
  • Olive oil – 2 tablespoons
  • Butter – 1 tablespoon
  • Onion – 1 medium chopped
  • Garlic – 4 cloves minced
  • Carrots – 2 medium sliced
  • Celery – 2 stalks chopped
  • Chicken broth – 6 cups
  • Heavy cream – 1 cup
  • Sun-dried tomatoes – ½ cup chopped
  • Spinach – 2 cups fresh
  • Italian seasoning – 1 teaspoon
  • Salt – to taste
  • Black pepper – to taste
  • Red chili flakes – ½ teaspoon

Instructions
 

Heat the Pot

  • Place pot on medium heat. Add olive oil and butter. Let them melt and warm gently.

Cook the Chicken

  • Add chicken pieces to pot. Cook until lightly golden. Stir often to cook evenly.

Add Vegetables

  • Add onion, carrots and celery. Cook until soft and fragrant. Stir gently to avoid burning.

Add Garlic and Seasoning

  • Add garlic and Italian seasoning. Cook briefly until garlic smells nice, not burnt.

Pour the Broth

  • Add chicken broth slowly. Stir well. Bring soup to a gentle boil.

Simmer the Soup

  • Lower heat. Let soup simmer for fifteen minutes. Flavors will blend nicely.

Add Cream and Tomatoes

  • Pour heavy cream into pot. Add sun-dried tomatoes. Stir slowly until creamy.

Add Spinach

  • Add fresh spinach. Stir until wilted. This takes only two minutes.

Final Seasoning

  • Add salt, pepper and chili flakes. Taste and adjust seasoning if needed.

Serve Hot

  • Turn off heat. Ladle soup into bowls. Serve hot and enjoy warmth.

Notes

  • Use fresh chicken for best taste
  • Cut chicken into equal pieces
  • Do not boil after adding cream
  • Use low heat for smooth texture
  • Add spinach at the end
